Description

A vibrant dish that combines juicy chicken, sweet pineapple, and creamy coconut rice, transporting you to a tropical paradise with every bite.


Ingredients

  • 2 chicken breasts
  • 1 cup pineapple chunks
  • 1 cup coconut rice
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: green onions for garnish

Instructions

  1. Cook the coconut rice according to package instructions, usually with coconut milk.
  2. Heat olive oil in a frying pan or grill over medium heat.
  3. Season chicken breasts with salt and pepper. Once the oil is shimmering, add the chicken and cook for 6-7 minutes per side.
  4. In the last few minutes of cooking, add the pineapple chunks to the pan with the chicken.
