- 1 cup pineapple chunks
- 1 cup coconut rice

Instructions
- Cook the coconut rice according to package instructions, usually with coconut milk.
- Heat olive oil in a frying pan or grill over medium heat.
- Season chicken breasts with salt and pepper. Once the oil is shimmering, add the chicken and cook for 6-7 minutes per side.
- In the last few minutes of cooking, add the pineapple chunks to the pan with the chicken.
