Description
A hearty Tex-Mex dish featuring layers of ground beef, fresh cabbage, black beans, sweet corn, and crunchy Fritos, topped with cheddar cheese and ranch dressing.

- 1 pound ground beef
- 1 packet taco seasoning
- 4 cups chopped green cabbage
- 1 cup diced tomatoes
- 1 cup canned black beans, drained and rinsed
- 1 cup canned sweet corn, drained
- 2 cups Fritos corn chips
- 1 ½ cups shredded cheddar cheese
- ½ cup ranch dressing or Southwest-style dressing
Instructions
- Brown the beef in a large skillet over medium heat until browned, breaking it apart as it cooks.
- Drain excess fat, then add taco seasoning and a splash of water; stir and let simmer for 2–3 minutes.
- Chop the cabbage and dice the tomatoes while the beef cooks. Drain the corn and black beans.
- In a large bowl or casserole dish, layer cabbage, seasoned beef, black beans, corn, and tomatoes, tossing gently.
- Top with Fritos and press slightly. Sprinkle cheese on top and allow it to melt into the warm ingredients.
- Drizzle with ranch dressing just before serving; toss lightly to combine if desired.
Notes
Customize with additional toppings like jalapeños or avocado. Make-ahead tips: prepare beef a day in advance and store in refrigerator.
