Light and refreshing spring rolls filled with vibrant vegetables and served with a creamy peanut sauce.
Ingredients
- Rice paper wrappers
- Lettuce leaves (butter or romaine)
- Carrots, julienned
- Cucumber, julienned
- Bell peppers, sliced
- Avocado, sliced
- Fresh herbs (mint, cilantro)
- Peanut butter
- Soy sauce (low-sodium)
- Rice vinegar
- Honey or maple syrup
- Garlic, minced
- Water
Instructions
- Prepare all the vegetables and herbs by slicing and julienning. Arrange them neatly.
- Fill a shallow dish with warm water.
- Dip one rice paper wrapper in the water for a few seconds until pliable.
- Lay the wrapper flat on a clean surface.
- Add a lettuce leaf, then a small amount of each vegetable and a few herb leaves in the lower third of the wrapper.
- Fold the sides of the wrapper over the filling and roll tightly from the bottom.
- Repeat the process until all ingredients are used.
- To make the peanut sauce, mix peanut butter, soy sauce, rice vinegar, honey, minced garlic, and water until smooth.
- Serve the spring rolls on a platter with the peanut sauce for dipping.
Notes
These spring rolls can be prepped a day in advance. Store the vegetables and sauce in airtight containers for freshness. Customize the filling as desired.
