Description

Ingredients

  • 4 Chicken Breasts, boneless and skinless
  • 1 Cup Blueberries, fresh
  • 1 Tablespoon Fresh Thyme (or 1 Teaspoon Dried Thyme)
  • 2 Tablespoons Olive Oil
  • 2 Tablespoons Honey
  • Salt and Pepper to Taste
  • 1 Tablespoon Lemon Juice

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, whisk together olive oil, honey, thyme, lemon juice, salt, and pepper until combined.
  3. Lay the chicken breasts in a baking dish and pour the marinade over them, turning to coat evenly.
  4. Scatter the fresh blueberries on top of the chicken.
  5. Bake for 25-30 minutes, ensuring the chicken reaches an internal temperature of 165°F (75°C).
  6. Let rest for a few minutes before serving.

Notes
